  I am a local farmer and use Joe's to process the livestock we raise to sell the meat. I have hundreds of customers that are very happy with the job they do just as I am very with them too. People rave about the sausage they make for me by the way. Being the only USDA inspected shop in the area it would be enough probably even if they didn't do such a great job. The fact that they do such a good job anyways only shows that they truly care about the quality of the work they do there.
